Salt Pork, 1st Attempt

After receiving Jennifer McLagan’s wonderful new book Fat: An Appreciation of a Misunderstood Ingredients, with Recipes for Christmas, I have been looking for an opportunity to use one of her recipes. I settled upon her Baked Bean recipe, but it requires salt pork. Low and behold, she has a recipe for that too, so I am beginning with salt pork and then will make baked beans.

For spices, her recipe calls for juniper berries, black peppercorns, fresh bay leaves, and quatre espices. Not having all of these, I used juniper berries, black peppercorns, dried bay leaves, dried ginger, allspice berries, cloves, and nutmeg.

Now all I have to do is wait for 4 days.
